Already discussed this with Tim and Tomasz, filed as bug as a reminder:

It seems the SUL tables are currently not in the SQL backup job. Would be great to have them survive mishaps (and also to mine them for wikistats, but contingency is good reason by itself)

Set up as cron job on one of the snapshot hosts for a weekly dump of the tables. This is not an actual backup, just as the xml dumps in general aren't backups.
