This is due to inline styles within the document itself. If these are used on the desktop site then this is currently a tricky problem to solve. There is an open ticket to allow editors to target mobile differently to desktop. It's feasible but tricky! :)
My mistake.. I actually misunderstood the problem. The text is left aligned rather than center aligned and this is due to css from not being applied from MediaWiki:Common.css
