We get 2000+ daily 404s for those URLs; documentation at http://developer.apple.com/library/ios/#documentation/AppleApplications/Reference/SafariWebContent/ConfiguringWebApplications/ConfiguringWebApplications.html suggests they are different, but the same :-).
As I am not an iUser, probably best to consult with one on what looks best.

That would be very nice. Are/need these icons just be rasterized PNGs of [[wikitech:File:Wikimedia labs logo.svg]], or is there some Apple magic to it?

They are served as PNGs, and iOS adds rounded corners and button-like appearence to apple-touch-icon.png; if one doesn't want that, or wants to have higher control over how exactly one's Apple Touch icon looks like, apple-touch-icon-precomposed.png can be served instead.
In production, we serve regular PNG icons, and let iOS do its magic; I'm told it works well.
