Adding new wikis is currently undefined at this point. We could investigate automated solutions, but this has had undesirable consequences in the past and since this is not a common occurrence, it's not needed.
A new component, some documentation and a link from wikistats will be adequate.

Maybe subscribe to https://lists.wikimedia.org/mailman/listinfo/newprojects with a special user and then parse incoming email?
This was really about stats.wikimedia, not wikistats.wmflabs, right? (Nevertheless they have this same issue to solve)
Wikistats is being phased out and new wikis pageview counts (not edits) are automatically added after reviewed by analytics engineering and ops.
